- 4 eggs
- 1/2 teaspoon salt
- 1 cup milk
- 6 cups chicken broth
- 1 onion, diced
- 2 tablespoons fresh parsley, chopped
- In a bowl, mix the flour, eggs, salt, and milk to form a smooth batter.
- Heat a non-stick skillet over medium heat and pour in a thin layer of batter, cooking until lightly browned. Flip and cook the other side.
- Repeat with remaining batter, stacking the cooked pancakes on a plate.
- Once cool, roll the pancakes tightly and slice them into thin strips.
- In a pot, bring the chicken broth to a boil and add the diced onion.
- Simmer until the onion is tender, then add the cut strips of pancake.
- Serve hot, garnished with fresh parsley.
