- 200 grams digestive biscuits
- 100 grams butter, melted
- 600 grams cream cheese
- 150 grams sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 250 grams fresh strawberries
- 200 ml heavy cream
- 2 tablespoons powdered sugar
- Preheat the oven to 175°C (350°F).
- Crush the digestive biscuits and mix with melted butter. Press into the bottom of a springform pan.
- In a bowl, mix cream cheese, sugar, eggs, and vanilla extract until smooth.
- Pour the cream cheese mixture over the biscuit base.
- Bake in the oven for 50 minutes or until set.
- Allow to cool before refrigerating for at least 4 hours.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Top the cheesecake with whipped cream and fresh strawberries before serving.

- Ensure the cheesecake is fully cooled before refrigerating.
- Fresh strawberries can be replaced with other berries if desired.
