A traditional rich fruitcake enjoyed during the Christmas season.

Ingredients

  • 1 cup raisins
  • 1 cup currants
  • 1 cup chopped walnuts
  • 1 cup chopped almonds
  • 1 cup mixed candied peel
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup brandy or rum

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix all dried fruits, nuts, and candied peel with 1/2 cup of flour.
  3. In another bowl, cream together the butter and brown sugar.
  4. Add the eggs one by one, mixing well after each addition.
  5. Combine the remaining flour, baking powder, spices, and salt.
  6. Add the dry ingredients to the wet mixture and mix thoroughly.
  7. Fold in the floured fruit mixture and brandy/rum.
  8. Pour the batter into a prepared cake pan.
  9. Bake for about 2 hours or until a toothpick inserted comes out clean.
  10. Let cool before serving.

Notes

  • Store the cake in an airtight container to keep it moist.
  • Can be made several weeks in advance and fed with more brandy for extra flavor.
