- 1 cup raisins
- 1 cup currants
- 1 cup chopped walnuts
- 1 cup chopped almonds
- 1 cup mixed candied peel
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup brandy or rum
- Preheat the oven to 325°F (160°C).
- In a bowl, mix all dried fruits, nuts, and candied peel with 1/2 cup of flour.
- In another bowl, cream together the butter and brown sugar.
- Add the eggs one by one, mixing well after each addition.
- Combine the remaining flour, baking powder, spices, and salt.
- Add the dry ingredients to the wet mixture and mix thoroughly.
- Fold in the floured fruit mixture and brandy/rum.
- Pour the batter into a prepared cake pan.
- Bake for about 2 hours or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
- Store the cake in an airtight container to keep it moist.
- Can be made several weeks in advance and fed with more brandy for extra flavor.
