Egusi Suppe is a popular West African dish made with ground melon seeds, vegetables, and various proteins. It is rich, flavorful, and hearty.

Ingredients

  • 2 cups ground egusi (melon seeds)
  • 1 pound spinach or bitter leaf
  • 1 pound meat (beef, goat, or chicken)
  • 1 cup palm oil
  • 1 large onion, chopped
  • 2 bouillon cubes
  • 1 teaspoon ground pepper
  • 1 teaspoon salt (to taste)
  • 2 cups water (adjust as needed)

Instructions

  1. In a large pot, heat the palm oil over medium heat and sauté the chopped onions until translucent.
  2. Add the meat and cook until browned, then stir in the ground egusi and mix well.
  3. Add water, bouillon cubes, ground pepper, and salt. Stir to combine.
  4. Let the mixture simmer for about 20 minutes, adding more water if necessary.
  5. Add the spinach or bitter leaf and cook for an additional 10 minutes.
  6. Adjust seasoning as needed and serve hot with fufu or rice.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • This dish can be made vegan by omitting meat and using vegetable broth.
  • Adjust the spice level to your preference.
