Dolma, a traditional dish of stuffed peppers, is a flavorful Mediterranean recipe that is both hearty and healthy.

  • 4 large bell peppers
  • 1 cup rice
  • 2 onions, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can diced tomatoes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a pan, heat the olive oil and sauté the onions until translucent.
  3. Add the rice, diced tomatoes, paprika, salt, and pepper. Cook for about 5 minutes.
  4. Remove from heat and stir in the parsley and lemon juice.
  5. Cut the tops off the bell peppers and remove the seeds.
  6. Stuff each pepper with the rice mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 45 minutes, then uncover and bake for an additional 15 minutes to brown.

Notes

  • For added flavor, consider adding ground meat to the stuffing.
  • These can be made ahead and stored in the refrigerator before baking.
