A classic French dish featuring chicken braised in red wine, flavored with mushrooms, onions, and bacon.

Ingredients

  • 1 chicken, cut into pieces
  • 2 cups red wine
  • 1 onion, diced
  • 2 carrots, sliced
  • 4 slices bacon, chopped
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1 teaspoon thyme
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, heat olive oil over medium heat and brown the bacon.
  2. Add chicken pieces and brown on all sides. Remove and set aside.
  3. Add onion, carrots, and garlic to the pot; sauté until softened.
  4. Sprinkle flour over vegetables, stirring to combine.
  5. Slowly add red wine, chicken broth, tomato paste, thyme, and bay leaf.
  6. Return chicken to the pot, cover, and simmer for about 1 hour.
  7. In the last 15 minutes, add mushrooms.
  8. Season with salt and pepper to taste before serving.

Notes

  • Serve with crusty bread or mashed potatoes.
  • For best flavor, let it sit overnight in the refrigerator before reheating.
