Cloud bread is a low-carb alternative to traditional bread, made primarily with eggs and cream cheese, resulting in a light, fluffy texture.

Ingredients

  • 3 large eggs
  • 3 ounces cream cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into two bowls.
  3. In the bowl with the yolks, add cream cheese and mix until smooth.
  4. Add the salt to the yolk mixture and stir until combined.
  5. In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
  6. Gently fold the egg whites into the yolk mixture until well combined.
  7. Scoop the mixture onto the prepared baking sheet in rounds.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let cool and serve as desired.

Notes

  • Cloud bread can be stored in an airtight container in the refrigerator for up to a week.
  • It can be frozen for longer storage; just reheat in the oven when ready to use.
