This decadent Chocolate Chip Cookie Dough Layer Cake features rich layers of chocolate cake, filled with delicious cookie dough frosting, and topped with chocolate ganache.

  • 1 cup buttermilk
  • 1 cup semi-sweet chocolate chips
  • 1 cup brown sugar
  • ½ cup all-purpose flour (for cookie dough)
  • ½ cup unsalted butter (for cookie dough)
  • ½ cup brown sugar (for cookie dough)
  • ⅓ cup granulated sugar (for cookie dough)
  • 1 teaspoon vanilla extract (for cookie dough)
  • 1 cup mini chocolate chips (for cookie dough)
  • 1 cup heavy cream (for ganache)
  • 8 ounces semi-sweet chocolate (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. Add the softened butter, eggs, vanilla extract, and buttermilk, mixing until combined.
  4. Fold in the chocolate chips.
  5. Divide the batter evenly into the prepared pans and bake for 25-30 minutes.
  6. Let cakes cool completely in the pans before removing.
  7. For the cookie dough filling, mix the softened butter, brown sugar, granulated sugar, and vanilla extract until creamy.
  8. Gradually add flour and fold in mini chocolate chips.
  9. Once cakes are cooled, layer them, spreading cookie dough filling between each layer.
  10. For the ganache, heat heavy cream until just boiling, then pour over chopped chocolate, stirring until smooth.
  11. Pour ganache over the top of the assembled cake, allowing it to drip down the sides.

Notes

  • Allow the cake to set for at least 30 minutes before serving for best texture.
  • This cake is best stored in the refrigerator due to the cookie dough filling.
