- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar, divided
- 1/4 teaspoon salt
- 2 (8 oz) packages cream cheese, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- Preheat the oven to 325°F (160°C).
- In a medium bowl, mix together graham cracker crumbs, melted butter, 1/4 cup sugar, and salt.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add the remaining sugar and mix until well combined.
- Add eggs one at a time, mixing well after each addition, then add vanilla extract.
- Fold in chocolate chips and pour the mixture over the crust.
- Bake for 25-30 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before cutting into bars.
Notes
- For best results, allow the cheesecake bars to chill overnight.
- Use a sharp knife to cut clean edges on the bars.
