Deliciously creamy cheesecake bars with a rich chocolate chip twist.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 1/4 teaspoon salt
  • 2 (8 oz) packages cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix together graham cracker crumbs, melted butter, 1/4 cup sugar, and salt.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  4. In a large mixing bowl, beat cream cheese until smooth. Gradually add the remaining sugar and mix until well combined.
  5. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  6. Fold in chocolate chips and pour the mixture over the crust.
  7. Bake for 25-30 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before cutting into bars.

Notes

  • For best results, allow the cheesecake bars to chill overnight.
  • Use a sharp knife to cut clean edges on the bars.
