Ingredients

Scale
  • 250g all-purpose flour
  • 250g sugar
  • 200g unsalted butter
  • 5 large eggs
  • 100g cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 200ml buttermilk
  • 1 tsp vanilla extract
  • 400g cherries, pitted
  • 200ml heavy cream
  • 100g dark chocolate, for drip

Instructions

  1. Preheat your oven to 180°C (350°F) and grease two 9-inch round cake pans.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
  6. Stir in the vanilla extract and mix until smooth.
  7. Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
  8. Once baked, allow to cool before removing from pans.
  9. Whip the heavy cream until stiff peaks form.
  10. Layer one cake with whipped cream and cherries, then place the second cake on top.
  11. Prepare the chocolate drip by melting dark chocolate and adding a little cream.
  12. Pour the chocolate drip over the top of the cake, letting it run down the sides.
  13. Decorate with remaining cherries and serve.

Notes

  • Make sure the cake is completely cool before decorating to prevent melting.
  • You can substitute cherries with other fruits if desired.
