- 250g all-purpose flour
- 250g sugar
- 200g unsalted butter
- 5 large eggs
- 100g cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 200ml buttermilk
- 1 tsp vanilla extract
- 400g cherries, pitted
- 200ml heavy cream
- 100g dark chocolate, for drip
- Preheat your oven to 180°C (350°F) and grease two 9-inch round cake pans.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
- Stir in the vanilla extract and mix until smooth.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
- Once baked, allow to cool before removing from pans.
- Whip the heavy cream until stiff peaks form.
- Layer one cake with whipped cream and cherries, then place the second cake on top.
- Prepare the chocolate drip by melting dark chocolate and adding a little cream.
- Pour the chocolate drip over the top of the cake, letting it run down the sides.
- Decorate with remaining cherries and serve.
Notes
- Make sure the cake is completely cool before decorating to prevent melting.
- You can substitute cherries with other fruits if desired.
