Cachapas venezolanas are traditional Venezuelan corn pancakes, known for their sweet flavor and soft texture, often served with cheese.

Ingredients

  • 2 cups fresh corn kernels
  • 1/2 cup cornmeal
  • 1/4 cup milk
  • 2 eggs
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon butter
  • 1 cup cheese (queso de mano or similar)

Instructions

  1. Blend the corn kernels, cornmeal, milk, eggs, sugar, and salt until smooth.
  2. Heat a skillet over medium heat and melt the butter.
  3. Pour a ladleful of the batter onto the skillet and cook until bubbles form on the surface, about 3-4 minutes.
  4. Flip the cachapa and cook for another 2-3 minutes until golden brown.
  5. Place cheese on top of the cachapa while it’s warm and fold it in half before serving.

Notes

  • Serve cachapas warm for the best texture.
  • They can be topped with additional ingredients like avocado or cream.
