Delicious and creamy cheesecake cupcakes with a tangy lime and blackberry flavor.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 2 tablespoons lime juice
  • zest of 1 lime
  • 1 cup fresh blackberries

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter; press into cupcake liners.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla, sour cream, lime juice, and lime zest.
  6. Fold in blackberries.
  7. Pour the batter into the prepared crusts.
  8. Bake for 20-25 minutes, until set.
  9. Allow to cool before refrigerating for at least 2 hours.
  10. Serve chilled and enjoy!

Notes

  • For a sweeter taste, you can add more sugar.
  • Top with extra blackberries for garnish.
  • These cupcakes can be made a day ahead for better flavor.
