2 medium beets
1 large potato
1 medium onion
1 large carrot
1/2 head cabbage
2 tablespoons vegetable oil
4 cups vegetable broth
2 tablespoons vinegar
1 teaspoon sugar
Salt and pepper to taste
Fresh dill for garnish
Instructions
Peel and chop the beets, potato, onion, and carrot.
In a large pot, heat vegetable oil over medium heat and sauté the onion and carrot until softened.
Add the beets, potato, and broth to the pot and bring to a boil.
Reduce heat and simmer for 30 minutes.
Add the cabbage, vinegar, sugar, salt, and pepper, then continue to cook for an additional 15 minutes.
Serve hot, garnished with fresh dill.
Notes
Borschtsch can be served with a dollop of sour cream for extra creaminess.
The soup can be made vegetarian or with meat, depending on preference.
