A delicious low-carb twist on traditional Flammkuchen, using cauliflower as the base for a healthy and satisfying meal.

Ingredients

  • 1 medium cauliflower, grated
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sour cream
  • 100 grams bacon, cooked and chopped
  • 1 onion, thinly sliced
  • 1/2 cup chives, chopped
  • 1 cup additional mozzarella cheese for topping

Instructions

  1. Preheat your oven to 220°C (428°F).
  2. In a large bowl, combine the grated cauliflower, mozzarella cheese, cream cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a thin rectangle.
  4. Bake for 20 minutes, or until golden brown.
  5. Remove the crust from the oven and spread the sour cream evenly over the top.
  6. Sprinkle the cooked bacon, sliced onions, and chopped chives over the sour cream.
  7. Add an additional layer of mozzarella cheese on top.
  8. Return to the oven and bake for another 10-15 minutes, until the cheese is melted and bubbly.
  9. Allow to cool slightly before slicing and serving.

Notes

  • For a spicier version, add red pepper flakes to the topping.
  • Leftovers can be stored in the fridge for up to 3 days.
  • This dish is perfect for meal prep!
