Banitsa is a traditional Bulgarian pastry made with layers of phyllo dough, filled with a mixture of eggs, yogurt, and cheese.

Ingredients

  • 500 grams phyllo dough
  • 300 grams feta cheese
  • 4 eggs
  • 200 grams yogurt
  • 100 grams melted butter
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, crumble the feta cheese and mix it with eggs, yogurt, and baking powder.
  3. Lay a sheet of phyllo dough on a clean surface and brush it with melted butter.
  4. Add a few tablespoons of the cheese mixture on one end and roll it up.
  5. Place the rolled phyllo in a greased baking dish and continue with the remaining dough and filling.
  6. Brush the top with any remaining melted butter.
  7. Bake for 30-40 minutes until golden brown.
  8. Allow to cool slightly before serving.

Notes

  • Banitsa can be enjoyed warm or at room temperature.
  • It can be served with yogurt on the side.
