- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 3 ripe bananas, sliced
- 1 cup brown sugar
- 1/2 cup rum
- 2 packages (8 oz each) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 teaspoon cinnamon
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a springform pan.
- In a skillet, melt brown sugar and rum over medium heat, then add sliced bananas and cook until caramelized. Set aside.
- In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add eggs one at a time, mixing well.
- Fold in caramelized bananas and cinnamon into the cheesecake mixture.
- Pour the cheesecake mixture over the crust and bake for 50-60 minutes until set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- For a stronger banana flavor, add banana extract to the cheesecake mixture.
- Serve with additional caramel sauce if desired.
