A delicious combination of creamy cheesecake and bananas foster for a delightful dessert.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 4 ripe bananas
  • 1/2 cup dark rum
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 60 minutes, or until the center is set. Cool and refrigerate for at least 4 hours.
  6. In a skillet, melt butter over medium heat, add brown sugar and stir until dissolved. Add sliced bananas and rum, cooking until caramelized.
  7. Drizzle the banana foster mixture over the chilled cheesecake before serving.

Notes

  • Allow the cheesecake to chill overnight for best results.
  • Use ripe bananas for better flavor.
  • For a non-alcoholic version, omit rum.
