- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 4 ripe bananas
- 1/2 cup dark rum
- 1/2 cup brown sugar
- 1/4 cup heavy cream
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 60 minutes, or until the center is set. Cool and refrigerate for at least 4 hours.
- In a skillet, melt butter over medium heat, add brown sugar and stir until dissolved. Add sliced bananas and rum, cooking until caramelized.
- Drizzle the banana foster mixture over the chilled cheesecake before serving.
Notes
- Allow the cheesecake to chill overnight for best results.
- Use ripe bananas for better flavor.
- For a non-alcoholic version, omit rum.
