- 2 ripe avocados
- 1 pound shrimp, peeled and deveined
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheese
- Preheat the oven to 375°F (190°C).
- Slice the avocados in half and remove the pit.
- In a bowl, combine shrimp, tomatoes, onion, cilantro, garlic powder, paprika, salt, and pepper.
- Stuff the avocado halves with the shrimp mixture.
- Top with shredded cheese.
- Bake for 15-20 minutes or until the shrimp is cooked and the cheese is bubbly.
