- 2 pounds potatoes, diced
- 2 ripe avocados, mashed
- 1 lime, juiced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- In a pot, boil potatoes until tender, about 15-20 minutes. Drain and let cool.
- In a large bowl, combine mashed avocados, lime juice, red onion, cilantro, salt, pepper, garlic powder, and cumin.
- Add cooled potatoes to the avocado mixture and gently mix until combined.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- This salad can be made a few hours in advance but is best when served fresh.
- For added flavor, consider adding diced bell peppers or jalapeños.
