A deliciously creamy avocado potato salad that is perfect for picnics and barbecues.

Ingredients

  • 2 pounds potatoes, diced
  • 2 ripe avocados, mashed
  • 1 lime, juiced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin

Instructions

  1. In a pot, boil potatoes until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, combine mashed avocados, lime juice, red onion, cilantro, salt, pepper, garlic powder, and cumin.
  3. Add cooled potatoes to the avocado mixture and gently mix until combined.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad can be made a few hours in advance but is best when served fresh.
  • For added flavor, consider adding diced bell peppers or jalapeños.
