  • 2 cloves garlic, minced

Instructions

  1. Slice the aubergines into 1/2 inch thick rounds.
  2. In a large bowl, mix olive oil, salt, pepper, minced garlic, and balsamic vinegar.
  3. Add the aubergine slices to the bowl and toss to coat evenly.
  4. Preheat the grill to medium heat.
  5. Place the aubergine slices on the grill and cook for 4-5 minutes on each side, until tender and grill marks appear.
  6. Remove from the grill and garnish with fresh herbs.
