- 2 large aubergines
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- Preheat the grill to medium-high heat.
- Slice the aubergines into 1/2 inch thick slices.
- In a bowl, mix olive oil, salt, pepper, and garlic powder.
- Brush both sides of the aubergine slices with the mixture.
- Place the slices on the grill and cook for about 4-5 minutes on each side or until tender.
- Serve warm as a side dish or as part of a sandwich.
Notes
