Grilled aubergines are a delicious and healthy addition to any meal.

Ingredients

  • 2 large aubergines
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the aubergines into 1/2 inch thick slices.
  3. In a bowl, mix olive oil, salt, pepper, and garlic powder.
  4. Brush both sides of the aubergine slices with the mixture.
  5. Place the slices on the grill and cook for about 4-5 minutes on each side or until tender.
  6. Serve warm as a side dish or as part of a sandwich.

Notes

  • For added flavor, marinate the aubergines in the oil mixture for at least 30 minutes before grilling.
