- 2 cups risotto rice
- 4 cups vegetable broth
- 1 cup mozzarella cheese, diced
- 1 cup cooked ham, diced
- 1 onion, finely chopped
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup flour
- salt to taste
- pepper to taste
- vegetable oil for frying
- In a pot, sauté the onion until translucent.
- Add the risotto rice and toast for a few minutes.
- Gradually add vegetable broth, stirring frequently, until rice is cooked and creamy.
- Remove from heat, stir in diced mozzarella and ham, and let cool.
- Once cooled, form the mixture into balls.
- Dredge each ball in flour, dip in beaten eggs, and coat with breadcrumbs.
- Heat vegetable oil in a frying pan and fry the arancini until golden brown.
- Remove and drain on paper towels before serving.
Notes
- For extra flavor, add herbs such as basil or parsley to the rice mixture.
- Serve with marinara sauce for dipping.
