- 200g Lebkuchen cookies
- 400ml heavy cream
- 200g dark chocolate
- 3 eggs
- 100g sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- Crush the Lebkuchen cookies and mix with melted butter to form the base.
- Prepare the chocolate mousse by melting dark chocolate and folding in whipped cream and beaten eggs.
- Add sugar, vanilla, and spices to the mousse mixture.
- Layer the mousse over the cookie base and refrigerate until set.
