A refreshing and crunchy salad featuring tortellini and vibrant vegetables.

Ingredients

  • 12 ounces cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing

Instructions

  1. Cook the tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine cooked tortellini, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and parsley.
  3. Toss the salad with Italian dressing until evenly coated.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added crunch, consider adding roasted nuts on top before serving.
  • This salad can be made a day in advance for flavors to meld.
