- 12 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Italian dressing
- Cook the tortellini according to package instructions. Drain and let cool.
- In a large bowl, combine cooked tortellini, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and parsley.
- Toss the salad with Italian dressing until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For added crunch, consider adding roasted nuts on top before serving.
- This salad can be made a day in advance for flavors to meld.
